High Protein Cottage Cheese Queso Dip

A fast, high-protein dip made with blended cottage cheese, shredded cheddar, and taco seasoning. Ready in about 5 minutes, roughly 10g protein per serving. Useful as a sauce for bowls, wraps, and leftovers.

Ingredients
  

  • 1 cup cottage cheese full-fat or 2%
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1 to 2 teaspoons taco seasoning
  • 1 to 3 tablespoons milk or water only if needed
  • Optional: hot sauce, diced jalapeƱos, smoked paprika, or salsa

Method
 

  1. Add the cottage cheese to a blender, food processor, or use an immersion blender. Blend for 30 to 45 seconds, until smooth.
  2. Pour the blended cottage cheese into a microwave-safe bowl or small saucepan. Add the shredded cheese and taco seasoning. Stir.
  3. Microwave for 30 seconds, stir, then heat again in 15 to 30 second intervals until warm and smooth. Or warm on the stovetop over low heat, stirring often, until the cheese melts.
  4. If the dip is too thick, stir in 1 tablespoon of milk or water at a time. Taste and add more taco seasoning or cheese if needed.
  5. Serve warm with tortilla chips, vegetables, nachos, rice bowls, wraps, tacos, eggs, or roasted potatoes.

Notes

Do not boil the dip. Gentle heat gives a smoother texture.
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat only the portion you plan to eat. Microwave in short intervals, stirring between each one, until hot.
Freezing is not recommended because cottage cheese dips can become watery or grainy after thawing.
